Awarded the Chef Marco Scaglione
‘For his unique recipes that combine aesthetics, healthy food and the flavours of the Mediterranean in the culinary art.’
The award was given on 25 October to Marco Scaglione, a chef of excellence in gluten-free cuisine, on the occasion of the Biennale Internazionale d'Arte Contemporanea in Florence.
This award is an important mark of recognition for the gluten-free sector as the organisation has chosen chef Marco Scaglione as the highest representative of this category. The award was presented at the Gala Dinner organised in honour of the artists of the 10th Florence Biennale, whose menu was entirely designed by the chef himself with the support of Roland's, social and business catering.
Marco Scaglione
Started at a young age and at the beginning of his career as a chef, Marco Scaglione entered the ‘Glutenfree’ world almost unconsciously.
He met and followed many people - especially children - with the discomforts and difficulties of coeliacs.
Since then, he has dedicated his time to studying and creating recipes that are more suitable for gluten-intolerant people so that they can, at least, enjoy healthy dishes with great enthusiasm.
Not being coeliac and being able to taste ‘the other side’ of food have helped him considerably in his constant search for and preparation of delicacies as close as possible to the conventional world; accepting, however, with great humility and respect that glutenfree has flavours and textures slightly different from the traditional.
Another desire is to bring the pleasure of the table to people who need ‘gluten-free’ in the same way as everyone else, has engaged him and made him increasingly diligent in this pursuit.
